Valencia Chicken Breasts

Juicy chicken breas with an orange-carrot sauce.  Another keeper!


  • (1 pound) fresh boneless skinless chicken breasts
  • Salt and pepper
  • 4 tablespoons olive oil
  • 2 carrots (small dice)
  • 1 yellow onion (small dice)
  • 1 teaspoon granulated sugar
  • 3 oranges (juiced)
  • 1 lime (juiced)
  • 1/2 cup white wine
  • 1 orange (rind & pith removed, sliced thinly in 8 slices & then slices halved)
  • 2 tablespoons Grand Marnier (more or less per taste preferences as opt add to Step 2 of prep)
