Low-Fat Scalloped Potatoes

Very easy and clever preparation! I liked the idea to pre-boiling the potatoes and tossing with with bechamelle sauce added with cheese! Delicious result!

Ingredients:

2 Tbsp unsalted butter (plus more to coat the dish)
kosher salt
3 lb yukon gold potatoes, peeled and thinly sliced
2 Tbsp all-purpose flour
1 c low-fat milk (room temperature)
1 c whole milk, room temperature
freshly ground black pepper
1/4 tsp freshly grated nutmeg
1/4 c gruyere cheese, grated
