Fava Bean and Mint Hummus with Variations

 

Bright green hummus with refreshing taste! I prepared this dish as a side dish with other small ones, for this reason I just made half of the recipe using the fresh mint growing in our garden and frozen beans.

For the toppic I used Za’atar (with sunmmac), paprika and fresh mint leaves.

Ingredients:

1 lb fresh fava beans (or frozen lima beans)
salt, to taste
1 clove garlic, peeled
1/2 cup extra virgin olive oil
1/4 cup fresh mint leaves, no stems
2 tablespoons fresh dill
1 lemon, juice of, divided (add a little bit of lemon juice at a time)
GARNISHES:
 extra virgin olive oil
 lemon wedges or slices
 sumac, cayenne or paprika
fresh mint or fresh dill
