Moussaka

Ingredients:

 

  • MOUSSAKA
  • 3 pounds eggplant (about 2 large)
  • 1 cup melted butter
  • 1 cup breadcrumbs (Italian-seasoned)
  • 2 yellow onions, chopped
  • 1 large clove garlic, crushed
  • 1/4 cup olive oil
  • 2 pounds ground beef (ground chuck or lamb)
  • 1 can (28 ounce) tomatoes (Italian style tomatoes, undrained and chopped)
  • 1 can (15 ounce) tomato sauce
  • 2 teaspoons salt
  • 1 teaspoon dried whole oregano
  • 1/2 teaspoon dried whole basil
  • 1/2 teaspoon dried whole thyme
  • 1/4 teaspoon freshly ground black pepper
  • Salt
  • Pepper
  • Bechamel sauce
  • 1/2 cup grated Parmesan cheese
  • BECHAMEL SAUCE
  • 1/2 cup melted butter
  • 1/2 cup all-purpose flour
  • 4 cups half and half
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 4 egg yolks
