Caramelized Cumin-Roasted Carrots


What for a great side dish! Nothing can go wrong with this recipe!
I made many times carrots with coriander and this was the first time I used cumin! Great! Wonderful! A delicious and very tasty change!


  • nonstick cooking spray
  • 12 carrots, peeled and cut on the diagonal into 1/2 inch pieces (medium to large carrots)
  • 2 Tbsp extra-virgin olive oil
  • 1 1/2 tsp cumin seeds
  • 2 tsp kosher salt
