A wonderful combination of a wonderful rub and dream pomegranate sauce. While I was preparing this dish I noticed that no salt was mentioned and I wondered if this was correct. Then I decided to try as it was and WOW what for sauce and chicken!

I had ready-pomegranate molasses from the shop, but I tried to prepare it as described. The homemade one was really much better and it was easy to prepare.

I will keep this recipe for save as I know that I will make it again!


      • 4 cups pomegranate juice
      • 1/2 cup sugar, white ( or to taste)
      • 1 lemon, large, juiced
      • 1/8 teaspoon coriander seed
      • 2 green cardamom seeds, whole
      • 3 allspice, whole, small
      • 1/2 teaspoon red pepper flakes ( use more or less as desired)
      • 1/2 tablespoon lemon zest, finely grated
      • 1 rosemary sprig, small, chopped
      • 1/2 teaspoon salt
      • 1/4 teaspoon pepper, black freshly ground
      • 24 chicken wings ( cut off wing tips if desired)
    • 2 teaspoons sesame oil
    • 4 garlic, cloves, minced
    • 1 teaspoon minced ginger
    • 1/2 tablespoon lemon zest, grated fine
    • 1/2 teaspoon red pepper flakes ( use more or less as desired)
    • 2/3 cup molasses, pomegranate ( you may use more or less as desired)
    • 2 green onions, thinly sliced ( garnish)
