Grilled (Or Oven Roasted) Japanese Eggplant Salad


I always loved grilled eggplants and this version is real delish! I appreciated very much the combination with the yogurt sauce and the addition of Zaatar spices! I did not toss the eggplants with the yogurt sauce, but I spread some yogurt sauce over each grilled eggplant sheet. For the chili I opted to sprinkle some Turkish chili flakes over the eggplants. For the green herbs I used some sliced African basil leaves.

  • 1 pound eggplant (3 Japanese eggplants)
  • Sea salt, to taste
  • 2 garlic cloves
  • 1/4 cup labneh (or you can substitute Greek yogurt)
  • 1 lemon, whole (juiced)
  • 2 tablespoons olive oil
  • 2 tablespoons za’tar seasoning
  • Jalapeño pepper (1/2 pepper)
  • 1/4 cup walnuts, crushed (toasted)
  • Freshly ground black pepper, to taste
  • Herbs (of your choice, such as cilantro, dill, basil, or parsley)

Lemon-Olive Grilled Chicken


I made this recipe twice as I forgot I tagged it once already. Well the preparation was so wonderful that my family was very glad to get this again.

I highly recommend this recipe! 🙂


  • cooking spray
  • 4 (4-ounce) skinless, boneless chicken breast halves
  • 1 1/2 tsp grated lemon rind, divided
  • 2 Tbsp honey mustard
  • 1 can(s) (14-ounce) fat-free, less-sodium chicken broth
  • 1 c whole-wheat couscous
  • 1/4 c sliced pimiento-stuffed olives
  • 1/4 c sliced pitted kalamata olives
  • 2 Tbsp chopped fresh basil
  • 1 Tbsp fresh lemon juice
  • 2 tsp olive oil
  • 1/4 tsp ground pepper

Teriyaki Salmon Strips


What for a wonderful easy and tasty salmon dish! I prepared this wonderful dish with all the suggested ingredients except of the green onion (I did not have it on hand) and the result was amazing and beautiful as well. I reduced the teriyaki sauce to about 1/2 cup using it to marinate; after grilling the the salmon I placed the fish on a plate and I quickly added the marinate on the quickly washed grilling pan with little water and I boiled it shortly. After this I served the now hot marinade on the fish.

I really can recommend this recipe; enjoy!!!


  • 1 1/2 cup teriyaki sauce, divided (I used only 1/2 cup)
  • 1 cup water
  • 300 g king salmon, cut into 1-ounce strips
  • 10 bamboo skewers, soaked in water for 30 minutes
  • 2 tablespoons canola oil
  • 2 tablespoons sesame seeds, for garnish
  • 2 tablespoons green onion, chopped (I did not use this)

Tex-Mex Corn on the Cob


We prepared the corn, after boiling it as described the we placed it on real wooden charcoal for grilling. In the meantime I prepared the sauce and I served the corn topped with it. How delicious! The ears were so goooood and made a wonderful side-dish!


  • 6 ears of corn on the cob
  • 3 Tbsp minced fresh cilantro
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp grated lime peel
  • 3/4 tsp salt
  • 3/4 tsp ground cumin
  • 1/4 tsp garlic powder
  • 6 Tbsp butter
