Ethiopian Beet and Potato Salad


Beets are one of our favorite summer salad! For this recipe I reduced the potatoes to only one small one (about 150 g) as we were only 3 persons. The mustard seeds make this dish special and I loved the lemon (instead of vinegar) for this recipe.
I did not dice the onions, I simply sliced them and I placed them about 1 hr in cold water to make them milder (I knew mines were to strong).
I topped them with parsley to serve.

  • 150 g yellow potatoes, peeled and diced
  • 500 g red beets
  • 1/4 c fresh lemon or lime juice
  • 2 Tbsp peanut oil (or olive oil)
  • 1/2 medium onion (yellow or red), sliced and placed in cold water to make it milder
  • 1 jalapeño chile, seeded and finely diced (optional)
  • 1/4 tsp kosher salt, to taste
  • 1/4 tsp yellow mustard seeds (mustard preparation with whole seed would work as well)
  • 1 pinch fenugreek powder (optional)
  • chopped parsley to serve

Soupe à l’oignon Gratinée: French Onion Soup


Easy and lightly sweet, this Onion soup is a classic thread that merits to tried out!

You will not need lot of time assembling the soup, but during the long cooking time you will have enough time to prepare other dishes or simply to take time for yourself!

Enjoy with additional French bread!


  • 3 large Vidalia or other sweet onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 2  tablespoons olive oil
  • salt and black pepper
  • 2 tablespoons water
  • pinch sugar
  • 3 tablespoons all-purpose flour
  • 1 cup Marsala wine
  • 2 quarts beef stock
  • 1 fresh French batard or baguette bread loaf
  • 4 ounces cave-aged Gruyere cheese

French Onion Bites


Cute and delicious finger to food to make again!


  • 1 baguette, sliced 1/4-inch thick ( 36 slices)
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 2 onions, large chopped ( about 4 cups)
  • 1 garlic clove, lightly crushed
  • 1 bay leaf
  • 1 sprig fresh thyme
  • 1/4 cup white wine ( I used cream sherry)
  • 1 1/2 cups gruyere, finely shredded ( about 3 oz)

Caramelized Onion Flatbreads

Savory flatbread that can be baked in the skillen and under the broiler.


  • 2 tablespoons oil (olive oil)
  • 2 cups sliced yellow onions
  • 1/4 teaspoon salt
  • 2 tablespoons water
  • 3/4 cup white whole-wheat flour
  • 3/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups water
  • 3 tablespoons oil, divided (extra-virgin olive oil)
  • 1/3 cup onions, caramelized (Prepared from ingredients above.)
  • Flaky sea salt (for garnish – optional)
